Survivor Pale Ale

Our Family and Friends have been watching and betting on the Survivor winners for years. This is the beer we drink on this occasion Two kegs end up empty before each season is over. A medium body Pale Ale with late hops and an aroma that doesn't quit. This recipe survives in repeat rotation at my house.

Mashing Instructions: 

Single Infusion Mash at 151º

Hops: 

1.75 oz. Magnum 10.0% AA 60 min
1.00 oz. Amarillo 8.5% AA 10 min
1.00 oz. Citra 14.0% AA 10 min
1.00 oz. Amarillo 8.5% AA 3 min
1.00 oz. Citra 14.0% AA 3 min
1.00 oz. Amarillo 8.5% AA flameout
1.00 oz. Citra 14.0% AA flameout
0.50 oz. Cascade 5.4% AA flameout

1.50 oz. Amarillo 8.5% AA dryhop for 7 days
1.50 oz. Citra 14.0% AA dryhop for 7 days

All Hops are pellet except Cascade

Extra Ingredients: 

Irish Moss

Yeast: 

WLP001 California Ale 1.8L starter, decanted
Pitch at 66º, hold fermentation at 68º

Special Instructions / Notes: 

Whirlpool boil and let sit 20 min prior to chilling.
Keg spike 7 days prior to serving. I use 2 tea balls per keg with a mix whole and pellet hops.
