On June 6th, 8 Falcons gathered the club's system to brew 40 gallons of Kale Bittner's Dark Heart of the Forest, an 18% ABV imperial stout inspired by Black Tuesday.
Even though we converted a lot of pale malt to matl extract, we still had 117 lbs of grain, and maxed out the 55 gallons mash tun! Fermentation wise, we are adding a healthy dose of brown sugar, table and maple syrup twice a day during the first 5 days of fermentation, as well as a good dose of oxygen.
On top of these 40 gallons, we will be making another 17 gallons. All that good stuff will go into a bourbon barrel, in which it will age for 6 to 12 months.
And YES, THE CLUB WILL GET A SHARE OF IT!!! We want to thank the Maltose Falcons board of directors for allowing us to use the club's system, it was awesome.
