July 2019 Club Shop Brew Session Sour with Jeremy

Join fellow Falcon Jeremy Stacy on Sunday, July 21 to brew some of his award-winning sour beer for the July Club Shop Brew Session. Jeremy will lead the crew in brewing a Catarina, a new provisional style in the BJCP style guidelines that is essentially a fruited imperial Berlinerweisse, if that was such a thing. It has its roots in Brazil, where a combination of German roots and an abundance of tropical fruit have combined to make an awesome tart style. This is a beer meant to be enjoyed fresh, with the fruit being added at the same stage a dry hop would be otherwise.

Since you will just be brewing the base beer, if you don’t like fruited sours then you can just dry-hop it and make a sour that’s great for summer. Or you can do both! Jeremy won a silver medal at NHC regionals in San Diego a few years back by making this beer with guava and dry-hopped with Simcoe.

This style is usually kettle-soured, but you can’t do that in a single day, so you'll be using the “reverse sour method” for this beer. Instead of fermenting first and then souring, you will be pitching bacteria first and keeping temps elevated before pitching yeast. That means you need to keep IBUs low, but that’s appropriate for the style, it shouldn’t have more than 10 IBUs anyway.  Jeremy will be propagating the bacteria from his personal stash for the group. After the brew, just pick your favorite tropical fruit and add it for your own personal stamp on the style!

Recipe:
41 lbs Pilsner malt
32 lbs Wheat malt
3oz Saaz hops
10 lbs tropical fruit of your choice!

Yeast:
Proprietary blend of lacto and pedio
German/Kölsch yeast

Everyone Participates, from Start to Finish
The brew session will use the Club's 40 gallon all grain system at the homebrew shop. There are 6 on this brew crew, including the crew leader(s),bnd the Falcon's Shares, which will be poured at the 45th annivsary ball. All Brew Crew members will participate in all aspects of the brewing process from measuring and crushing the grain to clean up and fermentation. Yeast will be provided, unless otherwise announced. We need one crew member to step forward to ferment the Falcon's Share at home!<

Economical & Educational
Unless otherwise announced, yeast will be provided for participants, but you may also choose to use your own yeast. Each participant will pitch in for the cost of ingredients (usually $10-$15 cash), and take 5 gallons of wort to ferment at home. So it&#39;s very economical and a great opportunity to get some hands-on brewing experience on a larger, more sophisticated brewing system than most homebrewers have access to, learn new recipes, and, of course, a chance to hang out with your fellow Falcons and share brews and snacks. Bring a carboy, bucket or keg for your wort, or buy one in the shop.

You must be a dues-paid Maltose Falcons member and your membership will be verified prior to your spot being confirmed. Please email your FULL NAME and CELL PHONE NUMBER publicity@maltosefalcons.com that your membership can be confirmed and you can be reached if there are any problems with your membership or with the brew day itself. No experience is necessary. We welcome new members, or those who have never been on a Brew Crew, or even to sign up for this event. If you have been on a Brew Crew within the past 3 months, you can still be on the waiting list if slots are left empty by brew day. Signups are at the end of this event posting.

First-Come, First-Served Basis, Sign-Ups Online Only
No sign ups will be accepted via the Yahoogroups, comments on Facebook, or emails. Once the slots are filled, members can be on a waiting list. Email publicity@maltosefalcons.com to ask to be on the waiting list. Participants are expected to arrive on time and stay until all equipment is cleaned and stowed and the work area and clubhouse are cleaned up. That is often after 4:00

More Rules
The Leader(s) of the Brew Crew is responsible overall for making sure that the equipment is properly handled and cleaned up, although the whole process is participatory and everything is up for discussion and debate. The Brew Crew Leader MUST provide a write-up and a few photos for the newsletter (you can post that on the club Facebook page or email them to publicity@maltosefalcons.com.

Anyone Can Come Hang Out & Observe!

Was that beer entered as a Wild Ale last year?  I judged a Katherina Sour dry hopped with citra that had guava in Portland in the 2nd round of the AHA's.  I loved it and we passed it on to the the mini-bos round (those judges made other choices).

It was entered as a Fruit Beer in 2018 and won bronze.  It won silver in Wild Ale in 2016.
