Tom Yom Thai Mead

I was recently in Columbia, SC where a creative mixologist gave me a drink with all the flavor elements of Tom Yom Khai soup. My imagination, being the way it is, devised a mead recipe with the flavor elements of Thai cooking.

Malt/Grain/Sugar/Extract: 

18# Orange Blossom Honey
1 stalk lemon grass (chopped)
5 Thai chilies
2 kaffir lime leaves
1 ounce lime juice
zest from 1 lime

Mashing Instructions: 

Heat all ingredients to 180*F. Chill and put into fermenter.
Add re hydrated yeast.

Red Star Cote de Blanc yeast
