Craig is one of our newer members and a friend of Chef Sean. Of course one could argue that Craig is a bit of a ringer, but he managed to produce an excellent chili that stood out in a field of 12 outstanding entries. Please note that this recipe is in industrial professional chef size.

Strong stale Coffee |

Tomato Paste (#10 Cans) |

Chopped Tomatoes (#10 Cans) |

| Directions |
|
Soak beans in water and beer over night
|
|
Cook bean until tender, adding water or beer as necessary to keep the beans covered.
|
|
Add Oranges and Coffee when the beans are finished
|
|
Remove beans from heat and let sit for 3 hours
|
|
In a separate pot saute the onions, peppers and chilis until translucent.
|
|
Add tomato paste and cook for 15 mins on medium high heat. Stir enough to prevent burning
|
|
Do NOT scrape the bottom of the pan if the mix burns
|
|
Add the rest of the ingredients. (The juices can be added to the beans if you need room)
|
|
Bring beans back to a boil
|
|
Add the tomato mix, stir and bring to boil
|
|
Put into containers to cool over night (Wait at least 24 hours to use)
|
|
Add your favorite ingredients (cooked chicken, beef, etc)
|
|
For added flavor and depth roast some dried chilis. When cool, grind them and use with the chili powder.
