Award-Winning Recipes from the 1997 Maltose Falcons Mayfaire Competition

First Place, Class 16
Extra, Export, Foreign-Style and American Stout

Dry (Irish) Extra Stout, " Midnight Stout "

by Ron Thomas, Silverton, OR. 

For 5 gallons:

Grains: 9 lbs. 2-row pale malt.  2 lbs. Flaked Barley.  1/2 lb.
Flaked Oats.  1.5 lbs. Roast Barley.  1/2 lb. Black Patent malt. 

Adjuncts: None

Hops: 2.5 oz. Kent Goldings, 5% A.A., boiled 60 min. 

Yeast: Wyeast #1742. 

Water:  Source not stated;  no amendments. 

Procedure: Mash grains at 154 F. for 60 min.  Sparge with 5 gallons
water at 170 F.  Total boil time 60 min. with hop additions as listed
above.  Ferment primary 16 days at 70 F., secondary 8 days at 70 F.
Prime with 3/4 cup corn sugar at bottling.  O.G. 1.056, F.G. 1.010.
