Third Place, Class 10
American Red and Amber Ale

" Redtail Clone "

by Mike Riddle and Jonathan Deeds, San Rafael, CA

For 10 gallons:

Grains: 14.5 lbs. Canadian 2-row pale malt.  3.5 lbs. Honey malt.
1.6 lbs. 20 L. crystal malt. 

Adjuncts:

Hops: 1.5 oz. Cluster flowers, boiled 60 min.  0.75 oz. Cascade
flowers, boiled 30 min.  0.75 oz. Cascade, boiled 15 min.  0.75 oz.
Cascade, boiled 5 min. 

Yeast: Redtail culture, 1 liter starter from slant. 

Water: Source not stated, amended with 2 teaspoons gypsum. 

Procedure: Mash grains at 148 F. for 60 min.  Total boil time 90
min. with hop additions as listed above.  Ferment primary 10 days at
64 F., secondary 6 days at 64 F.  Bottle with 7.5 oz. corn sugar to
prime.  O.G. 1.053, F.G. 1.015.
