California Common Beer

" Left Coast Nectar "

For 5 gallons:

Grains: 10 lbs. domestic 2-row pale malt.  1.5 lbs. 40 L. crystal
malt. 

Adjuncts:

Hops: 1.75 oz. Northern Brewer pellets, 8.0% A.A., boiled 60 min.  1
oz. Willamette pellets, 5.0% A.A., added at end of boil. 

Yeast: Wyeast #2112 California Lager, in 1/2 liter starter. 

Water: Bottled drinking water, amended with 1 teaspoon gypsum. 

Procedure: Mash grains at 122-125 F. for 45 min., 150-155 F. for 60
min., 170 F. for 10 min.  Total boil time 60 min. with hop additions
as listed above.  Ferment two-stage at 63 F.  Prime with 3/4 cup corn
sugar at bottling.  O.G. 1.051, F.G. not recorded.
