India Pale Ale

" Columbus' Error "

For 5 gallons:

Grains: 9 lbs. English pale malt.  1 lb. English pale malt, toasted
20 min. at 350 F.  1.5 lbs. Munich malt.  1 lb. 40 L. Crystal malt.
1/2 lb. Wheat malt. 

Adjuncts: None

Hops: 1.25 oz. Columbus, 12.4% A.A., first wort hopped.  1/2 oz.
Liberty, 4.5% A.A., first wort hopped.  1 oz. Liberty, boiled 20 min.
1/4 oz. Columbus, boiled 20 min.  1 oz. Crystal, 3.2% A.A., steeped
15 min. while cooling.  7/8 oz. Ultra, 2.5% A.A., dry hopped.  1/4
oz. Columbus, dry hopped. 

Yeast: Brewtek CL-160 British Draught Ale, in starter. 

Water:  Amended with 2 teaspoons gypsum in the sparge. 

Procedure: Mash liquor 3.25 gallons water at 81.5 C.  Mash at 68 C.
for 90 min., 70 C. for 20 min., mash-out at 75 C.  Sparge with 5.75
gallons water at 77 C.  Total boil time 90 min. with hop additions as
listed above.  Ferment primary 13 days at 20 C., rack to secondary
and dry hop with additions as listed above.  O.G. 1.062, F.G.
unstated.
