First Place, Class 19, Wheat BeerWeizenby Michael Bowe, Mar Vista, CA. For 15 gallons: Grains: 10 lbs. German Pilsner malt. 17.5 lbs. German Wheat malt. Hops: 2 oz. Saaz leaf, 4.8% A.A., boiled for 60 min. Yeast: Wyeast #3068, from starter. Water: Carbon filtered. Procedure: Decoction mash: Rest mash strike 104 F. 4 gallon decoction to strike 150 F. for 30 min., to strike boil for 30 min., return to rest mash, strike 124 F. for 90 min. Raise to strike 145 F. for 15 min. Raise to strike 162 F. for 30 min. Mash out at 172 F. Total boil time 90 min. Ferment primary 10 days at 65 F., lager thereafter. O.G. 1.062, F.G. not stated.
