First Place, Class 6, India Pale Ale

"Rocket IPA"

by Steve Rittenhouse, Los Angeles, CA.

For 5 gallons:

Grains: 6 lbs. Klages. 5 lbs. English 2-row. 1 lb. Crystal 20 L.

Hops: 1.5 oz. Columbus, 12.4% A.A., boiled 60 min. 1 oz. U.K. Northdown, 6.1% A.A., boiled 15 min. 0.5 oz. Brambling Cross,added at fire off. Dry hop with 0.5 oz. East Kent Goldings.

Yeast: London Ale Yeast.

Water: Tap water.

Procedure: Mash for 1 hour at 155 F. Total boil time 90 min. Ferment 2 stage at 65 F. O.G. 1.052, F.G. 1.014.
