Award-Winning Recipes from the 1996 Maltose Falcons Mayfaire Competition

First Place, Class 5, Pale Ale

"Cypress Ale"

by Ken Schroeder, Redwood City, CA.

For 10 gallons:

Grains: 16 lbs. 2-row. 2 lbs. Crystal L. 59, 1.3 lbs. CaraPils.

Hops: 1.5 oz. Perle plugs added to the boil at 30 min., 3.5 oz. Cascade plugs added at 60 min., 2 oz. Crystal pellets added at 85 min. Dry hop with 2 oz. Crystal.

Yeast: Burlingame Station 800 ml yeast cake.

Water: Hetch Hetchy water system, amended with 15 grams gypsum.

Procedure: Mash: Rest 40 C. for 20 min., 65 C. for 90 min., 75 C. for 10 min. Boil with hop additions as above. Ferment primary 5 days at 68 F., secondary 10 days at 63 F. O.G. 1.060, F.G. 1.013.
