Award-Winning Recipes from the 1995 Maltose Falcons Mayfaire Competition

First Place, Class 15, Dark Lager

Munich Dunkel

For 15 gallons:

Grains: 20 lbs. German 2-row pale malt. 3 lbs. Belgian CaraVienne malt. 3 lbs. Belgian CaraMunich malt. 1 lb. Belgian Special B malt.

Extracts: None

Hops: 3.25 oz. Tettnang leaf, 5.2% A.A., boiled 60 min., calculated to yield 22 IBU.

Yeast: Wyeast #2308, from starter.

Water: Activated charcoal filtered.

Procedure: Single decoction mash, decoction boiled for 30 min. Rest at 149 F. for 30 min., and at 160 F. for 30 min. Total boil time 90 min. Ferment 1 stage for 14 days at 47 F., then lager in kegs. O.G. 1.055, F.G. 1.017.
