Award-Winning Recipes from the 1995 Maltose Falcons Mayfaire Competition

First Place, Class 5, Pale Ale

"Burton Pride", English Pale Ale

by Fred Waltman and Steve LaBrie, Culver City, CA.

For 5 gallons:

Grains: 4 lbs. English pale malt. 4 lbs. Klages malt. 1 lb. 20 L. Crystal malt.

Hops: 1.2 oz. Challenger, 7.5% A.A., boiled 60 min. 1 oz. Brambling Cross, 5.4%, boiled 15 min. 1 oz. Brambling Cross, added at fire off.

Yeast: Wyeast British.

Water: "Burtonized" tap water.

Procedure: Single-infusion mash at 152 F. for 60 min. Total boil time 60 min. Ferment 2-stage at 62 F. O.G. and F.G. not stated.
