Award-Winning Recipes from the 1995 Maltose Falcons Mayfaire Competition

First Place, Class 4, British Bitter

"Bored Bitter", Ordinary Bitter

by MB and Steve Casselman, Reseda, CA.

For 45 gallons:

Grains: 25 lbs. Klages malt. 30 lbs. British pale malt. 3 lbs. 37 L. Carastan malt. 3.5 lbs. 80 L. English Caramel malt.

Adjuncts: 4 lbs. Torrified wheat. 2.2 lbs. Demerara sugar. 0.5 lb. Golden Syrup.

Hops: 2.5 oz. Progress pellets, boiled 60 min. 2 oz. Fuggles leaf, boiled 60 min. 3 oz. East Kent Goldings, boiled 15 min. 3 oz. Fuggles leaf, boiled 15 min. 5 oz. East Kent Goldings pellets, added at fire off.

Yeast: 1 quart per each 5 gallons Ringwood.

Water: Charcoal filtered, amended with 1 tablespoon epsom salt and 3.5 tablespoons gypsum.

Procedure: Mash at 122 F. for 20 min., 158 F. for 90 min., 172 F. for 20 min. Total boil time 90 min. Ferment 9 days at 65 F. O.G. 1.040, F.G. 1.010.
