Award-Winning Recipes from the 1995 Maltose Falcons Mayfaire Competition

First Place, Class 2, European Pale Lager

"Bat Out Of Helles", Munich Helles

by Paul Sedgwick, Canoga Park, CA.

For 5 gallons:

Grains: 7 lbs. Pilsner malt. 2 lbs. Munich malt.

Hops: 1 oz. Hallertau leaf, 3.2% A.A., boiled 60 min. 1 oz. Hallertau leaf, boiled 30 min. 1 oz. Hallertau leaf, boiled 10 min.

Yeast: Wyeast Bavarian Lager, in 1 quart starter.

Water: Distilled, amended with 7.2 grams gypsum and 2.7 grams salt.

Procedure: Mash at 128 F. for 30 min., 154 F. for 60 min., 170 F. for 5 min. Sparge with 170 F. water to collect 6/5 gallons in 45 min. Total boil time 60 min. Ferment primary 7 days at 48 F., secondary 21 days at 35 F. O.G. 1.048, F.G. 1.011.
