Award-Winning Recipes from the 1995 Maltose Falcons Mayfaire Competition

First Place, Class 1, American Pale Lager

"Multi-Brau Lite"

For 40 gallons:

Grains: 40 lbs. German Pils malt. 20 lbs. Klages malt. 9 lbs. Munich malt. 4 lbs. CaraPils malt.

Hops: 2 oz. Hallertau plugs, 2 oz. Saaz leaf, 2 oz. Perle pellet, all boiled for 90 min. 2 oz. Saaz leaf, 1 oz. Hallertau plug, both boiled for 15 min.

Yeast: 1 quart per each 5 gallons German brewery yeast (Cassman).

Water: 20 gallons distilled water, amended with 1 tablespoon Calcium Chloride.

Procedure: Mash rest at 111 F. for 30 min. Decoct and reintroduce to rest mash to strike 153 F. for 60 min. Decoct and reintroduce to rest mash to strike 172 F. for 20 min. Total boil time 90 min. Ferment primary 2.5 weeks at 45 F., secondary 4 weeks at 45 F. O.G. 1.040, F.G. 1.008.
